hummus
(see recipe above)
spinach
(enough to cover tortilla)

goat cheese crumbles
(feta cheese works well too)
Instructions
Hummus
Add all ingredients in a blender and blend until smooth.
Use the reserved liquid from the can of garbanzo beans to achieve the desired consistency by adding in small quantities and continuing to blend.
Veggie Wraps
Heat the tortillas in the microwave for 20 seconds to make them easier to roll.
Spread a layer of hummus over the surface of the tortilla and cover with spinach leaves.
Layer the cucumber, cherry tomatoes, red onion, carrots, and goat cheese crumbles, making sure not add too much.
Roll the tortilla, secure with toothpicks, and cut in half.
