Sometimes you prepare a recipe because you have extra ingredients on hand that you need to use. I had fresh mint that I wanted to do something unique with, and decided to pair it with watermelon to make this refreshing summer cocktail. If you want to make a non-alcoholic version, I’d suggest adding an extra half an ounce of the watermelon-mint simple syrup and serving it in a glass with ice and topped with club soda.

Watermelon-Mint Tequila Sour

Ingredients
- 2 ounces tequila blanco/plata
- 1 ounce watermelon-mint simple syrup recipe below
- 1 ounce lime juice
- 1 pinch salt
Instructions
- Add salt, lime juice, watermelon-mint simple syrup, and tequila to a cocktail shaker filled with ice.
- Shake until chilled and double strain into a coupe glass.
- Garnish with a mint leaf.
Watermelon-Mint Simple Syrup
Ingredients
- 2 cups watermelon juice
- 1 cup sugar
- 30 small leaves of fresh mint
Instructions
- Cut watermelon into 1” pieces and put into a blender. Six cups (¼ of watermelon) should yield around 2 cups of juice. Blend the watermelon and strain into a measuring cup.
- Add strained watermelon juice to a saucepan and simmer until reduced to 1 cup.
- Add sugar and stir to dissolve.
- Remove from heat and add mint. Steep for 10 minutes.
- Strain into storage container.
Notes
Simmering the watermelon juice to 1 cup will take around 45 minutes. Stir occasionally. Adding the mint at the end is key. If added sooner, it will add a bitter vegetal taste to the syrup.
