Hummus Veggie Wraps

Ingredients
Hummus
- 1 can garbanzo beans (liquid reserved)
- .25 cup parsley (chopped)
- 4 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 tablespoons tahini
- 1 clove garlic
- 1 teaspoon salt
- .5 teaspoon cumin
- black pepper (to taste)
- .125 teaspoon sesame seed oil (optional)
- 1 teaspoon crushed red pepper (optional)
- .5 teaspoon paprika (optional)
Veggie Wrap
- 2 large tortillas
- hummus (see recipe above)
- spinach (enough to cover tortilla)
- .5 cucumber julienned
- .25 cup cherry tomatoes (diced)
- .125 cup red onion (diced)
- .125 cup carrots (shredded)
- goat cheese crumbles (feta cheese works well too)
Instructions
Hummus
- Add all ingredients in a blender and blend until smooth.
- Use the reserved liquid from the can of garbanzo beans to achieve the desired consistency by adding in small quantities and continuing to blend.
Veggie Wraps
- Heat the tortillas in the microwave for 20 seconds to make them easier to roll.
- Spread a layer of hummus over the surface of the tortilla and cover with spinach leaves.
- Layer the cucumber, cherry tomatoes, red onion, carrots, and goat cheese crumbles, making sure not add too much.
- Roll the tortilla, secure with toothpicks, and cut in half.
