Bee’s Knees

Often, the simplest cocktails are the most enduring. I think the Bee’s Knees is particularly good with a more herbal gin. I love making it with Letherbee’s 2017 Autumnal Gin. If you’re not familiar with their releases, Letherbee creates two limited seasonal gins per year. Every year it’s different. The rosemary in the 2017 release is superb in conjunction with the lemon and honey in the Bee’s Knees.

PS – If you’re into simple cocktails, I highly suggest Robert Simonson’s book, 3-Ingredient Cocktails.
