It can be a challenge to match the complexity of a well-made (alcoholic) cocktail. However, when one considers all the elements that contribute to make cocktails enjoyable, it’s simpler to create non-alcoholic counterparts. The Shaman’s Medley is the perfect example because it incorporates egg white to give it that silky mouthfeel you find in so many classics. The highlight of this recipe is DHŌS Bittersweet, a non-alcoholic aperitif.

Shaman’s Medley
Ingredients
- 1 oz. DHŌS Bittersweet
- 1 egg white
- ¾ oz. lemon juice
- ¾ oz. vanilla simple syrup
- 2 dashes Scrappy's Bitters Firewater Tincture (will contribute a small amount of alcohol; omit if not desired)
- 2 drops saline solution (or a small pinch of salt)
- 3 leaves fresh sage (reserve one for garnish)
Instructions
- Combine Bittersweet, egg white, lemon juice, vanilla simple syrup, Firewater Tincture, saline, and sage leaves in a shaker tin and dry shake. (Dry shaking means without ice.)
- Add ice to shaker tins, and shake again until chilled.
- Shake until chilled.
- Double strain into chilled coupe glass.
- Garnish with a single sage leaf.
